Each chat-wallah had his own style. Some told you to keep count of the gol-gappas that you had hogged while some kept the count for you. You never had to order a specific amount of gol-gappas...just stand there with a "pattal" (a kind of crude bowl made from leaves) and the chat-wallah will begin his ritual of serving gol-gappas one by one.
